One natural notion of "random (countably infinite) L-structure" is a probability measure on the space of L-structures with domain omega which is invariant and ergodic for the natural action of the symmetric group Sym(omega) on this space. We call such a measure an ergodic structure. The most famous example of an ergodic structure is the Erdos-Renyi random graph model on domain omega, which gives measure 1 to the isomorphism type of the Rado graph.
